The Art of Natural Cheesemaking
Introductory Rennet Cheesemaking Class Tickets: $35 to $45/person (sliding scale)

David Asher of Blacksheep School of Cheesemaking is an organic farmer, farmstead cheese maker, and cheese educator based on the gulf islands of British Columbia where he explores traditionally cultured methods of cheesemaking. His class, “Introduction to Rennet Cheesemaking 101,” is a unique opportunity to interact with him and a small group in a Point Reyes home. The course looks into the making of  basic rennet cheese curd, the foundational recipe from which nearly every type of rennet cheese evolves. Kefir, a multifaceted probiotic and cheesemaking starter culture, will also be covered. Optional: If you are not already familiar with making kefir, which will be used for the starter culture, you are invited to come to a free introduction to kefir class with Lisa Bleier prior to Asher’s class.

About David Asher:  David Asher offers cheese outreach to communities near and far with the Black Sheep School of Cheesemaking. Through workshops in partnership with food-sovereignty-minded organizations, he shares his distinct cheesemaking style. His workshops teach a cheesemaking method that is natural, DIY, and well suited to the home kitchen or artisanal production. He is the author of The Art of Natural Cheesemaking.
